Salted Lemon Chicken Soup

Ingredient

1 dressed chicken (skin removed)
75g Jin Hua ham
1 salted lemon
2 slices ginger
12 cups water

Seasoning

1/2 tsp salt
Method
Remove inner organs of chicken. Rinse. Remove skin and fat. Scald in boiling water for a while. Rinse and drain.
Rinse Jin Hua ham and cut into strips.
Boil water. Add chicken and ham strips. Bring it to boil. Reduce to low heat and boil for about an hour . Add salted lemon and boil for another hour. Season with salt. Serve.
