Winter Melon and Barley

Ingredient

2 catty winter melon (1280g)
2 taels barley (80g)
1 tael Fox nuts (40g)
2 pieces lotus leaves
1 catty lean pork (640g)
6 bowls water

Method

Wash lean pork and scald in boiling water. Rinse and drain. Wash lotus leaves.
Cut winter melon (with skin) into thick chunks. Wash and set aside.
Put all ingredients into pot. Cook over high heat for 5 minutes. Simmer over low heat for another hour. Add salt. Serve.
