大頭魚枝竹湯

大魚頭 1 個
花生 3兩
枝竹 1條
去核紅棗 8粒
薑 2片
水 10碗

Method

花生用水浸片刻洗淨,紅棗洗淨,枝竹折斷成約8厘米長後,以水洗淨浸軟。
大魚頭洗淨抺乾,切半,下1湯匙油燒熱鑊,煎香薑片後,下大魚頭煎至兩面呈微黃,盛起。
水煲滾後,下花生、紅棗及已煎魚頭以大火煲至滾後,轉慢火煲1小時,下枝竹再煲1小時,以鹽調味,即成。
