Pig's Trotter with Watercress and Candied Date Soup

Ingredient

30g watercress
1 pig's trotter (about 750g)
6 candied dates
1/3 quarter dried tangerine peel
2 slices ginger
salt a pinch

Method

Wash watercress. Trim
Remove hair form pig's trotter and wash. Put into boiled water and cook for 5 minutes. Remove and rinse.
Wash candied dates. Soak dried tangerine peel in water until tender and remove pith.
Bring 12 cups of water to the boil with dried tangerine peel. Put in pig's trotter. When ingredients boil, put in watercress, candied dates and ginger slices. Boil for 10 minutes. Lower heat and cook for 2 hours until pig's trotter is tender. Season with salt. Serve.
