Panfried Leather Skin (Sa Meng)

Ingredient

8 leather skin fish(150g)
2 stalks celery(cut into sections)
3 stalks spring onion(cut into sections)
1 hot hot chili(cut finely)
2 slices ginger

Seasoning

2 tbsp Pu Ning fermented bean paste
1 tsp sugar
Pepper to taste
Sauce
1/4 tsp salt
1/2 tsp ginger juice
Pepper to taste
Method
Slice off fish head (slanting). Peel and rinse. Wipe dry. Marinade and leave for 20 minutes. Set aside.
Heat up 1 tbsp oil. Pan fry fish till both sides turn golden. Dish up.
Saute ginger slices in the same frying pan till fragrant. Add fish. Pan fry till done. Add celery sections and seasoning. Stir fry till sauce thickens. Add spring onion sections and hot chili. Mix well. Serve.
