Abalone Mushroom with Fish Maw

Ingredient

Fish Maw 5 taels
Sliced abalone mushroom 3 taels
Choy sum 4 stalks
Ginger 3 slices
Spring onion 2 stalks

Seasoning

Water 6 taels
Stock 3 tbsp
Oyster sauce 1 tbsp
Dark soy 1/2 tsp
Corn Starch 1/2 tsp
Salt 1/2 tsp
Sugar 1/2 tsp
Chicken powder 1/4 tsp
Method
Soak fish maw.
Saute ginger, spring onion. Put in water, salt and chicken powder. Bring to a boil and put in fish maw. Simmer for 10 minutes. Drain.
Bring stock to a boil. Add abalone mushroom and cook for 2 minutes. Add fish maw and cook until done. Mix sugar, dark soy, oyster sauce and corn starch with water. Stir in and cook for a while until done.
