Deep Fried Loofah Pancake

Ingredient

250g smooth loofah
100g shrimp meat
2 eggs (beaten)
80g sweet potato starch
1 stalk spring onion (chopped finely)
3 stalks coriander (chopped finely)
Pepper to taste

Seasoning

1/2 tsp salt
1/2 tsp sugar
1/2 tsp fish sauce
Pinch of pepper
Method
Peel smooth loofah and remove stem. Rinse and cut into small pieces.
Rinse shrimp. Drain and dice.
Mix shrimp, chopped spring onion and loofah with seasoning. Add beaten eggs and sweet potato starch. Mix well.
Heat up 1/2 cup oil. Pour in some batter and deep fry over low heat till one side turns golden. Turn it over and deep fry the other side till golden. Dish up. Sprinkle chopped coriander and pepper on top. Serve.
