潮州蠔仔粥

Ingredient

蠔仔 200克
冷飯 2碗
免治豬肉 100克
大地魚碎 3湯匙
冬菜 2湯匙
芹菜莖 2條(切粒)
雞湯 4杯
薑 2片
葱 1棵 (切粒)
芫荽 1棵 (切粒)

Seasoning

鹽 1茶匙
魚露 1茶匙
麻油 數滴
胡椒粉 適量
Sauce
蠔仔醃料:
鹽 1茶匙
胡椒粉 2茶匙
醃料:
生抽 1/2 茶匙
糖 1/2茶匙
魚露 1茶匙
生粉 1茶匙
胡椒粉 適量
Method
先將冷飯以開水略沖,瀝乾,備用。
冬菜洗淨,搾乾水份,免治豬肉以醃料醃15分鐘,大地魚碎以水浸軟,備用。
蠔仔以2湯匙生粉洗淨,用水沖洗乾淨後,用蠔仔醃料醃約15分鐘,放入滾水內與薑片烚片刻,盛起以水沖洗,瀝水,備用。
將雞湯煲滾後,加入免治豬肉拌勻至免治豬肉熟透,下蠔仔、冷飯、芹菜粒、大地魚碎及冬菜煲滾,灑下葱及芫荽碎,即成。
