麵醬脆皮鱔片

Ingredient

白鱔片 6兩
麵包糠 2兩
蛋黃 2隻

Seasoning

生粉 1 湯匙
麻油 1茶匙
雞粉 1/4茶匙
胡椒粉 1/4茶匙
鹽 1/4茶匙
原曬麵醬 少許
Sauce
汁料:
麵醬 2茶匙
頭抽 1茶匙
蒜蓉 1/2茶匙
乾?蓉 1/2 茶匙
糖 1/4 茶匙
芡汁:
粟粉 1/2茶匙
Method
脆皮鱔片:
蛋黃加入調味料打勻。
鱔片蘸上蛋漿後,再在上面灑上麵包糠。
燒滾油,將鱔片放入油鑊用陰陽火炸至金黃色即可上碟,佐以汁料伴吃。
汁料:
爆香蒜蓉,乾?蓉和麵醬,再加入糖、頭抽及少許清水炒勻,埋芡後以小碗盛起即成。
