Fried Preserved Fish

Ingredient

Seabream 1 (1 catty)

Seasoning

Marinade:
Ginger 1 slice
Spring onion 1 stalks
Salt 2 tbsp
Method
Rinse seabream. Score the fish from the back towards the belly (keep the belly intact). Remove all the guts.
Rub the fish with salt and add marinade. Marinate for about half an hour. Rinse well and pat dry. Hang the fish for about one hour.
Deep fry in hot and warm oil until golden brown.
