Deep fried glutinous rice dumpling with red bean paste

Ingredient

300g glutinous rice flour
1 tbsp lard or peanut oil
80g raw sugar bar
1 cup water
300g red bean paste

Method

Boil sugar bar in water until it dissolves. Turn off the heat. Stir in glutinous rice flour. Cover the lid and leave it for a while. Stir again until thick batter consistency. Leave it to cool.
Put the glutinous rice flour on a table. Add oil and knead into dough.
Divide the dough into 30 portions. Shape them round and roll them flat.
Divide red bean paste into 30 portions. Stuff one portion of red bean paste onto each rolled-out dough. Fold the dough once into a semicircle and seal.
Deep fry the dumplings in hot oil until golden. Serve.
