樂豆花開 (赤小豆鯽魚湯)

鯽魚約1斤
陳皮1/4個
薑2片
鹽適量
油2湯匙

Method

赤小豆洗淨,用清水浸約半小時,鯽魚去鱗去內臟洗淨抹乾水份,用少許鹽醃15分鐘,燒熱鑊,下油2湯匙爆香薑片,將鯽魚煎至兩面微黃色盛起。
陳皮浸軟,刮去果瓤。
燒滾2 1/2湯碗水,放入赤小豆、鯽魚、陳皮、薑片旺火煲半小時,改用文火煲1 1/2小時,加適量鹽調味便成。
