Eight-treasure dessert rice

Ingredient

1/2 cup glutinous rice
60g red bean paste
1/2 tbsp cooked oil
2 tbsps sugar
dried apricot, raisin
1 glace cherry

Sauce

1/3 cup water
2 tbsps crushed rock sugar
corn starch solution
1 tbsp candied osmanthus
Method
Wash glutinous rice. Soak it in water for 5 hours and drain. Steam until done. Stir in cooked oil and sugar.
Grease a bowl lightly. Put 1/3 of the steamed glutinous rice into a bowl. Cut dried apricot into long strips. Arrange raisins and dried apricot on the dome of rice. Press the red bean paste flat and put on top of the glutinous rice. Top with the rest of the glutinous rice.
Steam the glutinous rice over water for 25 minutes. Unmould it by putting the bowl upside down onto a plate. Garnish with glace cherry.
Cook rock sugar in water until it melts. Add candied osmanthus and corn starch solution. Pour this syrup onto the rice. Serve.
