富貴撈飯(鮑魚福建炒飯)

Ingredient

罐頭鮑魚1/2隻
雞肉120克
蝦仁100克
冬菇3朵
蒜頭、瑤柱各2粒
紅蘿蔔粒、菜心梗粒各1/3杯
冷飯2碗
雞蛋2個(拂勻)
鹽3/4茶匙(加水1湯匙拌勻)
清水1 1/4杯

Seasoning

醃料
鹽、糖、紹酒、粟粉各1/2茶匙
生抽1茶匙
胡椒粉、麻油各少許
調味料
鹽、糖各1/2茶匙
生抽、老抽各1茶匙
蠔油2茶匙
胡椒粉、麻油各少許
粟粉水適量(後下)
Method
雞肉切粒,下醃料拌勻。蝦仁洗淨,下鹽、胡椒粉拌勻。
冬菇浸軟,切粒;瑤柱浸軟,撕成幼絲;鮑魚切粒。
燒熱油1湯匙,下蛋漿,煎至五成熟,加入飯炒勻,灑下鹽水,炒勻,盛起。
燒熱油1湯匙,爆香1粒蒜頭,將蝦仁炒至八成熟,盛起。
燒熱油1湯匙,下蒜頭炒香,加入雞肉粒炒勻。
下鮑魚粒、冬菇粒、瑤柱絲炒勻,贊少許酒。
下紅蘿蔔粒、調味料及清水,煮8分鐘,加入蝦仁、菜心梗粒煮滾,傾入粟粉水埋獻,澆於炒飯上。
